  • 4 cups Fresh Spinach
  • 3 tablespoons Olive Oil
  • 4 cloves Garlic, minced
  • 1 whole Lemon Juice
  • 1 teaspoon Cracked Black Pepper

  • 1 teaspoon Red Pepper Flakes (optional)

Instructions
  1. Prepare the Shrimp: Rinse the shrimp under cold water and pat them dry with paper towels. Season the shrimp with salt and cracked black pepper.
  2. Heat the Olive Oil: In a large skillet, heat the olive oil over medium heat. Once hot, add the minced garlic and sauté for about 1 minute, or until fragrant. Be careful not to let it burn.
  3. Cook the Shrimp: Add the seasoned shrimp to the skillet. Cook for about 2-3 minutes on each side, or until the shrimp turn pink and opaque. If using, add red pepper flakes for a bit of heat.
  4. Add Spinach: Once the shrimp are cooked through, add the fresh spinach to the skillet. Stir and cook for another 2-3 minutes, or until the spinach is wilted.
  5. Finish with Lemon Juice: Squeeze the juice of one lemon over the shrimp and spinach mixture. Toss everything together to combine and enhance the flavors.
  6. Garnish and Serve: Remove the skillet from heat. Garnish with freshly chopped parsley. Serve warm as a main dish or over rice or pasta if desired.

This dish can be served over rice or pasta for a heartier meal. For added flavor, consider adding a splash of white wine to the skillet while cooking.
