- Preheat the oven to 400°F (200°C). Pat the cod fillets dry with paper towels. In a small bowl, mix together olive oil, salt, pepper, and paprika. Brush this mixture over the cod fillets evenly.
- Place the cod fillets on a baking sheet lined with parchment paper. Bake in the preheated oven for 12-15 minutes or until the fish flakes easily with a fork.
- While the cod is baking, prepare the crema sauce. In a blender or food processor, combine the avocado, chopped jalapeño, Greek yogurt, lime juice, lime zest, and cilantro (if using). Blend until smooth and creamy. Adjust the seasoning with salt and pepper to taste.
- Once the cod is cooked, remove it from the oven. Plate the cod fillets and drizzle generously with the creamy avocado sauce. Serve with lime wedges on the side for an extra zesty kick.
Notes
Feel free to adjust the spice level by using more or less jalapeño. This dish pairs wonderfully with a side of steamed vegetables or rice.
