  • 1 lb Skirt Steak
  • 2 tablespoons Toasted Sesame Seeds
  • 1 teaspoon White Pepper
  • to taste Salt
  • 2 tablespoons Vegetable Oil
  • 1 cup Soy Sauce
  • 1 Pear peeled and diced
  • 1 tablespoon Brown Sugar
  • 1 tablespoon Rice Vinegar
  • 1 teaspoon Minced Garlic
  • 1 teaspoon Grated Ginger
  • 1 tablespoon Green Onions chopped, for garnish

Method
 

Instructions
  1. Pat the skirt steak dry with paper towels and season both sides with salt.
  2. In a small bowl, combine the toasted sesame seeds and white pepper. Rub this mixture evenly over both sides of the steak.
  3. Heat vegetable oil in a large skillet over medium-high heat.
  4. Once the oil is hot, add the skirt steak and sear for about 4-5 minutes on each side for medium-rare, or until your desired doneness is reached.
  5. Remove the steak from the skillet and let it rest for 5 minutes before slicing against the grain.
  6. In the same skillet, add the diced pear and sauté for about 2-3 minutes until softened.
  7. Pour in the soy sauce, brown sugar, rice vinegar, minced garlic, and grated ginger. Stir well to combine.
  8. Bring the mixture to a simmer and let it cook for about 5-7 minutes, or until it thickens slightly. Remove from heat.
  9. Slice the rested skirt steak and arrange it on a serving platter. Drizzle the sweet soy and pear reduction over the steak.
  10. Garnish with chopped green onions before serving.

Notes

For a spicier kick, consider adding a pinch of red pepper flakes to the reduction.
