- Pat the skirt steak dry with paper towels and season both sides with salt.
- In a small bowl, combine the toasted sesame seeds and white pepper. Rub this mixture evenly over both sides of the steak.
- Heat vegetable oil in a large skillet over medium-high heat.
- Once the oil is hot, add the skirt steak and sear for about 4-5 minutes on each side for medium-rare, or until your desired doneness is reached.
- Remove the steak from the skillet and let it rest for 5 minutes before slicing against the grain.
- In the same skillet, add the diced pear and sauté for about 2-3 minutes until softened.
- Pour in the soy sauce, brown sugar, rice vinegar, minced garlic, and grated ginger. Stir well to combine.
- Bring the mixture to a simmer and let it cook for about 5-7 minutes, or until it thickens slightly. Remove from heat.
- Slice the rested skirt steak and arrange it on a serving platter. Drizzle the sweet soy and pear reduction over the steak.
- Garnish with chopped green onions before serving.
Notes
For a spicier kick, consider adding a pinch of red pepper flakes to the reduction.
