  • 2 tablespoons toasted sesame oil
  • 1 tablespoon ground cumin
  • 1 tablespoon sesame seeds
  • to taste salt
  • to taste black pepper
  • 2 tablespoons unsalted butter
  • 1 medium leek white and light green parts only, finely chopped
  • 1 tablespoon fresh parsley chopped
  • 1 tablespoon fresh chives chopped
  • 1 teaspoon lemon zest

Method
 

Instructions
  1. Preheat your grill or skillet over medium-high heat.
  2. In a small bowl, mix together the ground cumin, sesame seeds, salt, and pepper.
  3. Pat the filet mignon steaks dry with paper towels. Brush both sides with toasted sesame oil.
  4. Coat the steaks evenly with the cumin and sesame mixture, pressing gently to adhere.
  5. Place the steaks on the hot grill or skillet. Cook for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached.
  6. While the steaks are cooking, prepare the browned leek compound butter. In a small saucepan over medium heat, melt the unsalted butter.
  7. Add the chopped leeks to the melted butter and cook, stirring frequently, until the leeks are golden brown and fragrant, about 5-7 minutes.
  8. Remove the saucepan from the heat and stir in the chopped parsley, chives, and lemon zest. Mix well and season with salt to taste.
  9. Once the filet mignon is cooked to your liking, remove it from the heat and let rest for 5 minutes.
  10. Serve the steaks with a generous dollop of the browned leek compound butter on top.

Notes

For a twist, you can add some minced garlic to the compound butter for extra flavor.
