- Prepare the Pistachio Crust: In a food processor, pulse the toasted pistachios until finely chopped. Add the saffron threads and pulse a few more times to combine. Transfer the mixture to a shallow dish and season with salt and pepper.
- Preheat the Oven: Preheat your oven to 400°F (200°C).
- Prepare the Veal Chops: Pat the veal chops dry with paper towels. Season both sides generously with salt and pepper.
- Sear the Chops: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the veal chops and sear for about 3-4 minutes on each side, until browned.
- Crust the Chops: After searing, remove the chops from the skillet and press one side of each chop into the pistachio mixture to coat. Place the crusted side up on a baking sheet.
- Bake the Chops: Transfer the baking sheet to the preheated oven and bake for 10-12 minutes, or until the veal reaches your desired level of doneness.
- Make the Browned Shallot and Thyme Butter: While the veal is baking, return the skillet to medium heat and add the butter. Once melted, add the chopped shallots and thyme. Cook, stirring frequently, until the shallots are golden brown and fragrant, about 5-7 minutes. Remove from heat and stir in lemon juice.
- Serve: Once the veal is done, remove it from the oven and let it rest for a few minutes. Serve the veal chops drizzled with the browned shallot and thyme butter.
Notes
For a twist, you can add crushed garlic to the butter for additional flavor.
