- Preheat the oven to 400°F (200°C).
- In a food processor, combine the toasted almonds, smoked cumin, salt, and black pepper. Pulse until the almonds are finely ground but not a paste.
- Pat the veal chops dry with paper towels. Rub each chop with olive oil and then coat them with the almond-cumin mixture, pressing it onto the meat to adhere well.
- Heat a large oven-safe skillet over medium-high heat. Once hot, add the veal chops and sear for about 3-4 minutes on each side until golden brown.
- Remove the veal chops from the skillet and set aside on a plate.
- In the same skillet, add the sliced red onions and cook over medium heat until they become soft and caramelized, about 8-10 minutes. Add the minced garlic and cook for an additional minute until fragrant.
- Pour in the beef broth and balsamic vinegar, stirring to combine. Bring the mixture to a simmer.
- Return the veal chops to the skillet, spooning some of the onion gravy over the top. Transfer the skillet to the preheated oven.
- Roast the veal chops in the oven for about 10-15 minutes, or until they reach an internal temperature of 145°F (63°C) for medium-rare.
- Once cooked, remove the skillet from the oven and let the veal chops rest for 5 minutes before serving.
- To serve, plate the veal chops and drizzle with the rich roasted red onion gravy. Garnish with chopped fresh parsley.
Notes
For added flavor, consider marinating the veal chops in olive oil, garlic, and herbs for a few hours before preparation.
