- Preheat your oven to 400°F (200°C).
- Line a baking sheet with parchment paper or lightly grease it with cooking spray.
- Place the cod fillets on the prepared baking sheet. Drizzle olive oil over each fillet and season with salt and pepper to taste.
- In a medium bowl, whisk together the sweet chili sauce, soy sauce, grated ginger, minced garlic, and lime juice until well combined.
- Pour the sauce mixture evenly over the cod fillets, ensuring each fillet is well coated.
- Sprinkle the finely chopped green onions over the top of the fillets.
- Bake in the preheated oven for 15-20 minutes, or until the cod is cooked through and flakes easily with a fork.
- Once cooked, remove from the oven and let it rest for a few minutes.
- Serve the cod fillets over a bed of jasmine rice and drizzle with any remaining sauce from the baking sheet.
- Garnish with fresh cilantro if desired.
Notes
For a spicier kick, consider adding some red pepper flakes to the sauce.
