- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the cubed sweet potatoes with olive oil, cinnamon, and a pinch of salt until well coated.
- Spread the sweet potatoes in a single layer on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 20-25 minutes, or until tender and slightly caramelized, flipping halfway through.
- If using, drizzle the roasted sweet potatoes with maple syrup and sprinkle with chopped pecans and mini marshmallows for the last 5 minutes of roasting.
- Remove from the oven and let cool slightly before serving.
