- In a large skillet, heat olive oil over medium heat.
- Add minced garlic and grated ginger to the skillet, cooking for about 1-2 minutes until fragrant, being careful not to burn.
- Increase the heat to medium-high and add the shrimp to the skillet. Cook for about 2-3 minutes on each side until the shrimp turn pink and opaque.
- Pour in the sweet chili sauce, soy sauce, and lime juice. Stir to coat the shrimp evenly.
- If desired, add crushed red pepper flakes for an extra kick. Season with salt and pepper to taste.
- Cook for an additional 1-2 minutes to allow the sauce to thicken slightly.
- Remove the skillet from heat and garnish the shrimp with chopped green onions and sesame seeds.
- Serve immediately over rice, noodles, or a bed of greens.
Notes
For a variation, add vegetables such as bell peppers or snap peas for added color and nutrition.
