- In a medium bowl, combine the honey, soy sauce, sweet chili sauce, sesame oil, minced garlic, and grated ginger. Mix well until the honey is fully dissolved.
- Add the shrimp to the marinade, ensuring they are well coated. Cover the bowl and let the shrimp marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.
- Heat a large skillet or wok over medium-high heat. Once hot, add the marinated shrimp along with the marinade to the skillet.
- Cook the shrimp for about 2-3 minutes on each side, or until they turn pink and opaque. Be careful not to overcook the shrimp.
- Once cooked, remove the skillet from heat. Sprinkle the toasted sesame seeds over the shrimp and toss to combine.
- Serve the sweet chili shrimp over cooked rice or noodles. Garnish with sliced green onions and, if desired, a pinch of red pepper flakes for added heat.

Feel free to adjust the level of sweetness and heat by adding more or less honey and red pepper flakes.
