  • 1 lb Salmon fillet Cut into bite-sized pieces
  • ½ cup Teriyaki sauce
  • 8 oz Lo mein noodles
  • 2 tbsp Vegetable oil
  • 2 cloves Garlic, minced
  • 1 tbsp Fresh ginger, minced
  • 2 cups Bok choy, chopped
  • 2 Green onions, sliced
  • Salt and pepper To taste
  • Sesame seeds For garnish (optional)

Method
 

Instructions
  1. In a bowl, combine the salmon pieces with teriyaki sauce. Allow to marinate for at least 15 minutes.
  2. In a large pot of boiling salted water, cook the lo mein noodles according to package instructions. Drain and set aside.
  3. In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium heat. Add the minced garlic and ginger, and sauté for about 1 minute until fragrant. Add the chopped bok choy and stir-fry for 3-4 minutes until tender. Season with salt and pepper. Remove from the skillet and set aside.
  4. In the same skillet, add the remaining tablespoon of vegetable oil. Heat over medium-high heat. Add the marinated salmon bites and cook for about 3-4 minutes, turning occasionally, until cooked through and caramelized.
  5. Add the cooked lo mein noodles to the skillet with the salmon. Toss everything together to combine and heat through.
  6. Plate the salmon and noodle mixture, topping it with the sautéed bok choy and sliced green onions. Sprinkle with sesame seeds if desired.

Notes

Feel free to adjust the amount of teriyaki sauce to your taste. You can also add other vegetables like bell peppers or carrots for extra color and nutrition.
