- In a small bowl, combine the ranch dressing, minced chipotle peppers, lime juice, salt, and pepper. Mix well until all ingredients are thoroughly combined. Adjust seasoning as needed. Refrigerate until ready to serve.
- In a large mixing bowl, combine the ground beef, diced jalapeños, diced red onion, garlic powder, smoked paprika, cayenne pepper, salt, and pepper. Mix gently until just combined, being careful not to overwork the meat.
- Divide the mixture into 4 equal portions and shape each portion into a burger patty.
- Preheat a grill or skillet over medium-high heat. Cook the burger patties for about 4-5 minutes on one side, then flip and place a slice of pepper jack cheese on each patty. Cook for an additional 4-5 minutes, or until the cheese is melted and the burgers reach your desired doneness (internal temperature of 160°F for medium).
- If frying, heat oil in a deep fryer or large pot to 350°F. Carefully add the curly fries in batches and fry until golden brown and crispy, about 3-4 minutes. Remove and drain on paper towels. Season with salt. If baking, preheat the oven according to package instructions. Spread the curly fries in a single layer on a baking sheet and bake until crispy, following the package directions.
- Toast the burger buns on the grill or in a skillet until lightly golden.
- Place a lettuce leaf on the bottom half of each bun, followed by a burger patty with melted cheese, tomato slices, and pickles. Top with the other half of the bun.
- Arrange the spicy jalapeño beef burgers on a serving platter alongside the crispy curly fries. Serve with the chipotle ranch sauce on the side for dipping.
Notes
Feel free to adjust the spice level by adding more or less cayenne pepper and jalapeños. You can also use different types of cheese if desired.
