- Rinse the Alaska Pollock fillets under cold water and pat them dry with paper towels. Season both sides with salt and pepper.
- In a large skillet, heat the vegetable oil over medium-high heat. Once hot, add the seasoned Pollock fillets. Cook for about 3-4 minutes on each side until golden brown and cooked through. Remove from the pan and set aside.
- In the same skillet, reduce the heat to medium and add the minced garlic and grated ginger. Sauté for about 1 minute until fragrant but not browned.
- Add the chili sauce, soy sauce, honey (if using), rice vinegar, and sesame oil to the skillet. Stir and bring to a simmer.
- Return the cooked Alaska Pollock fillets to the skillet, spooning the sauce over the fish. Cook for an additional 2-3 minutes to absorb the flavors.
- Remove the skillet from heat. Transfer the fish to a serving platter and drizzle with any remaining sauce.
- Garnish with chopped green onions and sesame seeds before serving.
- Serve with steamed rice or your choice of side dishes.
