  • 1 lb Alaska Pollock fillets
  • 2 tablespoons Vegetable oil
  • 4 cloves Garlic, minced
  • 2 tablespoons Chili sauce
  • 2 tablespoons Soy sauce
  • 1 tablespoon Fresh ginger, grated
  • 1 tablespoon Honey or sugar (optional) For sweetness
  • 1 tablespoon Rice vinegar
  • 1 teaspoon Sesame oil
  • 2 Green onions, chopped (for garnish)
  • 1 tablespoon Sesame seeds (for garnish)
  • Salt and pepper to taste

Method
 

Instructions
  1. Rinse the Alaska Pollock fillets under cold water and pat them dry with paper towels. Season both sides with salt and pepper.
  2. In a large skillet, heat the vegetable oil over medium-high heat. Once hot, add the seasoned Pollock fillets. Cook for about 3-4 minutes on each side until golden brown and cooked through. Remove from the pan and set aside.
  3. In the same skillet, reduce the heat to medium and add the minced garlic and grated ginger. Sauté for about 1 minute until fragrant but not browned.
  4. Add the chili sauce, soy sauce, honey (if using), rice vinegar, and sesame oil to the skillet. Stir and bring to a simmer.
  5. Return the cooked Alaska Pollock fillets to the skillet, spooning the sauce over the fish. Cook for an additional 2-3 minutes to absorb the flavors.
  6. Remove the skillet from heat. Transfer the fish to a serving platter and drizzle with any remaining sauce.
  7. Garnish with chopped green onions and sesame seeds before serving.
  8. Serve with steamed rice or your choice of side dishes.
