  • 1 Ripe pineapple, peeled, cored, and cut into rings
  • 1 Red bell pepper, finely diced
  • 1 Jalapeño pepper, seeded and minced
  • 1/4 cup Red onion, finely chopped
  • 1/4 cup Fresh cilantro, chopped
  • 1 Juice of lime
  • 1 tablespoon Honey or agave syrup
  • 1/2 teaspoon Smoked paprika
  • Salt and pepper to taste

Method
 

Instructions
  1. Preheat your grill to medium-high heat.
  2. Place the pineapple rings on the grill and cook for about 3-4 minutes on each side, or until grill marks appear and the pineapple becomes slightly caramelized. Remove from the grill and let cool.
  3. Once cool, chop the grilled pineapple into small pieces and place them in a mixing bowl.
  4. Add the diced red bell pepper, minced jalapeño, and chopped red onion to the bowl with the pineapple.
  5. Stir in the fresh cilantro, lime juice, honey (or agave syrup), and smoked paprika. Mix until all ingredients are well combined.
  6. Season with salt and pepper to taste. Adjust sweetness with more honey if desired.
  7. Let the salsa sit for at least 15 minutes to allow the flavors to meld together before serving.

Notes

This salsa can be served with grilled chicken, fish, or as a dip with tortilla chips. Feel free to adjust the level of spiciness by adding more or less jalapeño.
