- Preheat your grill to medium-high heat.
- Place the pineapple rings on the grill and cook for about 3-4 minutes on each side, or until grill marks appear and the pineapple becomes slightly caramelized. Remove from the grill and let cool.
- Once cool, chop the grilled pineapple into small pieces and place them in a mixing bowl.
- Add the diced red bell pepper, minced jalapeño, and chopped red onion to the bowl with the pineapple.
- Stir in the fresh cilantro, lime juice, honey (or agave syrup), and smoked paprika. Mix until all ingredients are well combined.
- Season with salt and pepper to taste. Adjust sweetness with more honey if desired.
- Let the salsa sit for at least 15 minutes to allow the flavors to meld together before serving.
Notes
This salsa can be served with grilled chicken, fish, or as a dip with tortilla chips. Feel free to adjust the level of spiciness by adding more or less jalapeño.
