Ingredients

Main Ingredients
  • 1 5-7 lb Prime Rib Roast, bone-in
  • 1 cup Guajillo Chili Powder
  • 2 tablespoons Toasted Fennel Seeds, crushed
  • 4 cloves Garlic, minced
  • 1 tablespoon Kosher Salt
  • 2 teaspoons Black Pepper
  • 1 teaspoon Smoked Paprika
  • 1 tablespoon Olive Oil
  • 1 stick Unsalted Butter, softened
  • 4 cloves Roasted Garlic, mashed
  • to taste Fresh Herbs (Thyme, Rosemary) For garnish

Equipment

  • Smoker
  • Meat Thermometer

Method

Instructions
  1. Take the prime rib out of the refrigerator and let it sit at room temperature for about 1 hour prior to cooking.
  2. In a bowl, combine guajillo chili powder, crushed toasted fennel seeds, minced garlic, kosher salt, black pepper, and smoked paprika. Mix well to form a spice rub.
  3. Rub the olive oil all over the prime rib. Generously apply the spice rub, making sure to coat all sides evenly.
  4. Preheat your smoker to 225°F (107°C). If using a grill, set it up for indirect heat.
  5. Place the seasoned prime rib in the smoker. Smoke for about 4-6 hours, or until the internal temperature reaches your desired doneness (130°F for medium-rare). Use a meat thermometer to check.
  6. In a small bowl, mix the softened butter with the mashed roasted garlic until well combined. Set aside.
  7. Once the prime rib reaches the desired temperature, remove it from the smoker and let it rest for at least 20-30 minutes.
  8. Slice the prime rib and serve with a dollop of caramelized garlic compound butter on top. Garnish with fresh herbs if desired.

Notes

For a different flavor, try adding different spices to the rub or using different types of wood for smoking.
