  • 1 tablespoon Fresh Thyme Leaves
  • 1 tablespoon Fresh Rosemary chopped
  • 1.5 pounds Prime Rib Roast
  • 1 cup Toasted Pine Nuts
  • ½ cup Breadcrumbs
  • ½ cup Grated Parmesan Cheese
  • 4 tablespoons Unsalted Butter
  • 6 leaves Fresh Sage Leaves
  • for garnish Fresh Parsley

Equipment

  • Grill or Grill Pan
  • Roasting Rack
  • Small Skillet
  • Baking Dish
  • Meat Thermometer

Method

Instructions
  1. Preheat the grill or a grill pan over medium-high heat. Brush the eggplant slices with olive oil and season with salt and black pepper. Grill the eggplant for about 4-5 minutes on each side or until charred and tender. Remove from the grill and set aside.
  2. In a small saucepan, combine the pomegranate juice, honey, balsamic vinegar, minced garlic, thyme, and rosemary. Bring to a boil over medium heat, then reduce the heat and let it simmer until thickened, about 10-15 minutes. Remove from heat and set aside.
  3. Preheat your oven to 375°F (190°C). In a bowl, mix the toasted pine nuts, breadcrumbs, and Parmesan cheese. Rub the prime rib with olive oil, salt, and pepper. Press the pine nut mixture onto the top of the prime rib to create a crust. Place the prime rib on a roasting rack in a baking dish. Roast in the preheated oven until it reaches your desired level of doneness (about 20 minutes per pound for medium-rare). Use a meat thermometer for accuracy.
  4. In a small skillet, melt the butter over medium heat. Add the sage leaves and cook until the butter is golden brown and the sage is crisp, about 3-4 minutes. Remove from heat and set aside.
  5. Once the prime rib is done, let it rest for 15 minutes before slicing. On a serving platter, arrange the grilled eggplant slices and drizzle with the pomegranate glaze. Slice the prime rib and place it on the platter next to the eggplant. Drizzle the browned butter and sage confit over the meat.
  6. Garnish with fresh parsley. Serve immediately, enjoying the rich flavors of the pomegranate, buttery sage, and hearty prime rib.

Notes

Feel free to adjust the sweetness of the glaze by adding more or less honey to your taste.
