  • 2 tablespoons Olive Oil
  • 1 large Onion, chopped
  • 4 cloves Garlic, minced
  • 2 Carrots, diced
  • 2 Parsnips, diced
  • 1 tablespoon Fresh Thyme Leaves
  • 1 cup Pomegranate Juice
  • 1/2 cup Balsamic Vinegar
  • 2 cups Beef or Lamb Broth
  • 2 tablespoons Honey
  • 1 teaspoon Dijon Mustard
  • to taste Fresh Thyme Sprigs, for garnish

Method
 

Instructions
  1. Season the lamb shanks generously with salt and pepper.
  2. In a large Dutch oven or heavy pot, heat the olive oil over medium-high heat. Add the lamb shanks to the pot and sear on all sides until browned, about 4-5 minutes per side. Remove the shanks and set aside.
  3. In the same pot, add the chopped onion, minced garlic, diced carrots, and diced parsnips. Sauté for about 5-7 minutes until the vegetables begin to soften.
  4. Stir in the fresh thyme leaves, then pour in the pomegranate juice and balsamic vinegar. Scrape up any browned bits from the bottom of the pot.
  5. Return the seared lamb shanks to the pot. Add the broth, honey, and Dijon mustard, stirring to combine.
  6. Bring the mixture to a gentle simmer. Cover the pot with a lid, reduce the heat to low, and let it braise for about 2 to 2.5 hours, or until the lamb is tender and falling off the bone.
  7. Once the lamb is cooked, remove the shanks from the pot and set aside. Increase the heat to medium-high and let the sauce simmer uncovered for about 10-15 minutes until it thickens.
  8. To serve, place the lamb shanks on a platter and spoon the rich root vegetable gravy over them. Garnish with fresh thyme sprigs.
