  • 2 Large eggs

Method
 

Instructions
  1. Preheat your oven to 350°F (175°C).
  2. Pour the melted butter into a 9x13 inch baking dish, ensuring it covers the bottom evenly.
  3. Sprinkle the brown sugar over the melted butter, spreading it out evenly.
  4. Arrange the drained pineapple slices on top of the brown sugar mixture. If using, place a maraschino cherry in the center of each pineapple slice.
  5. In a mixing bowl, combine the flour, granulated sugar, salt, and baking powder.
  6. In another bowl, whisk together the milk, eggs, and vanilla extract.
  7. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  8. Pour the cake batter over the arranged pineapple and brown sugar in the baking dish, spreading it evenly.
  9. Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  10. Once baked, allow the cake to cool in the pan for about 10 minutes, then invert onto a serving platter.
  11. Serve warm or at room temperature.
