- Hard Boil the Eggs: Place the eggs in a saucepan and cover them with cold water. Bring to a boil over medium-high heat. Once boiling, cover the pan, remove it from heat, and let it sit for 10-12 minutes.
- Cool the Eggs: After the time is up, transfer the eggs to a bowl of ice water to cool for about 5-10 minutes. This will make peeling easier.
- Prepare the Filling: Once the eggs are cool, peel them and slice them in half lengthwise. Carefully remove the yolks and place them in a mixing bowl.
- Mix Ingredients: To the yolks, add the mayonnaise, shredded sharp cheddar cheese, pimento cheese spread, Dijon mustard, garlic powder, cayenne pepper (if using), and salt and black pepper to taste.
- Mash and Combine: Using a fork, mash the yolk mixture until smooth and well combined. Adjust seasoning if necessary.
- Fill the Egg Whites: Using a spoon or a piping bag, fill the egg white halves with the pimento cheese mixture.
- Garnish: Sprinkle the filled eggs with paprika and chopped green onions if desired.
- Serve: Arrange on a platter and serve immediately, or refrigerate until ready to serve.
