  • 1 tablespoon Olive Oil
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
  • 1/4 teaspoon Garlic Powder
  • 1/4 teaspoon Paprika
  • 1/8 teaspoon Chili Powder Optional, for a touch of heat

Method
 

Instructions
  1. Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. Rinse pumpkin seeds under cold water and pat completely dry with paper towels. Ensure they are thoroughly dry for even roasting.
  3. In a mixing bowl, toss pumpkin seeds with olive oil, salt, pepper, garlic powder, paprika, and chili powder (if using). Ensure even coating.
  4. Spread seeds in a single layer on the prepared baking sheet. Avoid overcrowding.
  5. Roast for 20-25 minutes, stirring halfway through, until golden brown and crispy. Watch closely towards the end to prevent burning.
  6. Remove from oven and let cool completely on the baking sheet. This allows them to crisp further.
  7. Once cooled, store in an airtight container at room temperature for up to a week.

Notes

For extra flavor, try adding other spices like cumin, smoked paprika, or cayenne pepper. You can also add a touch of maple syrup for a sweet and savory combination.
