Method

Instructions
  1. Preheat your oven to 450°F (230°C).
  2. In a small bowl, combine the cracked pink peppercorns, dried wild sage, sea salt, black pepper, and minced garlic. Mix well.
  3. Rub the prime rib roast all over with the olive oil, ensuring it’s well coated.
  4. Generously apply the spice mixture to the roast, pressing it into the meat to create a crust.
  5. Place the seasoned prime rib on a roasting rack in a shallow roasting pan.
  6. Roast in the preheated oven for 20 minutes, then reduce the temperature to 325°F (160°C). Continue roasting for about 1.5 to 2 hours, or until a meat thermometer inserted into the thickest part of the roast reads 130°F (54°C) for medium-rare.
  7. While the roast is cooking, prepare the smoked garlic confit butter. In a small saucepan, melt the softened butter over low heat.
  8. Squeeze the roasted garlic cloves out of their skins into the melted butter and stir until combined. Season with a pinch of salt and set aside.
  9. Once the prime rib reaches your desired doneness, remove it from the oven and let it rest for at least 20 minutes before slicing.
  10. Serve the sliced prime rib warm, drizzled with smoked garlic confit butter and garnished with fresh herbs.

Notes

For best results, allow the prime rib to come to room temperature before cooking. Experiment with different herbs and spices in the rub for varied flavors.
