Method
 

Instructions
  1. Start by washing the peaches and cherry tomatoes thoroughly under cold water. Pat them dry with a clean kitchen towel.
  2. Cut the peaches into thin slices, removing the pit. Halve the cherry tomatoes.
  3. If using a block of mozzarella cheese, slice it into rounds that are similar in thickness to the peach slices. If using mozzarella balls, simply drain them and set aside.
  4. In a large serving platter or bowl, layer the sliced peaches, halved cherry tomatoes, and mozzarella slices. Alternate them in a visually appealing pattern.
  5. Tuck fresh basil leaves between the layers of fruit and cheese for added flavor and aroma.
  6. Drizzle the extra virgin olive oil over the entire salad, ensuring an even distribution.
  7. Follow with a drizzle of balsamic glaze. Adjust the amount to your taste preference; you can add more for a sweeter touch.
  8. Season the salad with salt and pepper according to your taste.
  9. Allow the salad to sit for about 10 minutes before serving to let the flavors meld together.
  10. Serve chilled or at room temperature as a refreshing side dish or light meal.
