  • 1/2 cup Dried fruit (cranberries, raisins, or apricots)
  • 1/4 cup Dark chocolate chips (optional)
  • 1/4 cup Shredded coconut (unsweetened)
  • 1 teaspoon Vanilla extract
  • 1 pinch Salt

Instructions
  1. Prepare the Pan: Line an 8x8 inch baking dish with parchment paper, leaving some overhang on the sides for easy removal later.
  2. Combine Dry Ingredients: In a large mixing bowl, combine the rolled oats, chopped nuts, mixed seeds, dried fruit, dark chocolate chips (if using), shredded coconut, and a pinch of salt. Mix well until all the dry ingredients are evenly distributed.
  3. Mix Wet Ingredients: In a separate bowl, combine the nut butter, honey or maple syrup, and vanilla extract. Stir until smooth and well blended.
  4. Combine Wet and Dry Mixtures: Pour the wet mixture over the dry ingredients. Using a spatula or wooden spoon, mix everything together until all the dry ingredients are thoroughly coated with the wet mixture.
  5. Press into the Pan: Transfer the mixture into the prepared baking dish. Press it down firmly and evenly with your hands or the back of a spatula to ensure the bars hold together well.
  6. Chill the Mixture: Place the baking dish in the refrigerator for at least 1-2 hours, or until the mixture is firm enough to cut into bars.
  7. Cut into Bars: Once chilled, lift the mixture out of the pan using the overhanging parchment paper. Place it on a cutting board and cut it into bars of your desired size.
  8. Store: Store the granola bars in an airtight container in the refrigerator for up to a week or in the freezer for longer storage.
