- In a large bowl, melt butter. Whisk in flour until smooth.
- Gradually whisk in milk until smooth. Stir in salt, pepper, and paprika (if using).
- Add cheddar and Monterey Jack cheese to the milk mixture; stir until melted and smooth.
- Pour cheese sauce over macaroni in the slow cooker.
- Stir to combine. Cook on low for 4-5 hours or high for 2-3 hours, or until macaroni is tender and heated through.
- If desired, sprinkle with bread crumbs during the last 30 minutes of cooking.
- Serve immediately.
Notes
For extra flavor, try adding a pinch of garlic powder or onion powder. You can also use different types of cheese, such as Colby or Gruyere.
