- In a medium bowl, combine rolled oats, peanut butter, honey (or maple syrup), milk, vanilla extract, and salt (if using).
- Mix thoroughly until everything is well combined and a dough forms. If the mixture is too dry, add a tablespoon of milk at a time until it's easy to roll into balls. If it's too sticky, add a tablespoon of oats.
- Stir in the chocolate chips and/or chopped nuts if using.
- Using your hands, roll the mixture into 1-inch balls.
- Place the oat balls on a plate lined with parchment paper.
- Refrigerate for at least 30 minutes to firm up (optional, but recommended).
- Store leftover oat balls in an airtight container in the refrigerator for up to a week.
Notes
For a vegan option, use maple syrup instead of honey. Feel free to experiment with other mix-ins such as dried cranberries, shredded coconut, or chia seeds. You can also roll the balls in cocoa powder or cinnamon for extra flavor and texture.
