Instructions
  1. In a medium bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
  2. Gradually add the powdered sugar and vanilla extract, beating until well combined.
  3. Stir in the semi-sweet chocolate chips, crushed graham crackers, and chopped nuts (if using) until evenly distributed.
  4. Using a spoon or your hands (lightly oiled to prevent sticking), roll the mixture into 1-inch balls.
  5. Place the cheesecake balls on a baking sheet lined with parchment paper and refrigerate for at least 2 hours, or until firm.
  6. If desired, melt the milk chocolate chips in a small saucepan over low heat, stirring frequently, until smooth. Drizzle the melted chocolate over the chilled cheesecake balls.
  7. Serve the chocolate chip cheesecake balls chilled. Enjoy!

Notes

Store leftover cheesecake balls in an airtight container in the refrigerator for up to 3 days. For a richer flavor, use full-fat cream cheese. You can also add different types of nuts or dried fruit to customize your cheesecake balls.
