- Preheat your grill or a grill pan over medium-high heat.
- In a small bowl, mix the mustard seeds and maple syrup until combined.
- Season the T-bone steaks with salt and pepper on both sides.
- Spread the mustard seed and maple mixture evenly over the top of the steaks, pressing it into the meat.
- In a skillet, heat the olive oil over medium heat. Add the cipollini onions and sauté until they are golden brown and charred, about 8-10 minutes.
- Drizzle the balsamic vinegar over the onions and stir to combine, cooking for an additional 2 minutes. Remove from heat and set aside.
- Place the crusted T-bone steaks on the grill and cook for about 4-5 minutes on each side for medium-rare, adjusting the time depending on your desired doneness.
- Once cooked to your liking, remove the steaks from the grill and let them rest for 5 minutes.
- Serve the T-bone steaks topped with the charred cipollini onions and garnish with fresh thyme.
Notes
For a different flavor, try using honey instead of maple syrup.
