  • 1.5 cups All-purpose flour
  • 0.5 cups Granulated sugar
  • 2 teaspoons Baking powder
  • 0.5 teaspoons Salt
  • 1 teaspoon Ground cinnamon
  • 1 Large egg
  • 0.5 cups Milk
  • 0.33 cups Vegetable oil
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Melted butter (for brushing)
  • 2 tablespoons Granulated sugar (for topping)
  • 1 teaspoon Ground cinnamon (for topping)

Method
 

Instructions
  1. Preheat your oven to 350°F (175°C). Line a mini muffin tin with paper liners or grease with cooking spray.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon until well combined.
  3. In a separate bowl, beat the egg, then add the milk, vegetable oil, and vanilla extract. Mix until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
  5. Fill each muffin cup about 2/3 full with the batter.
  6. Bake for 12-15 minutes or until a toothpick inserted into the center of a muffin comes out clean.
  7. While the muffins are baking, mix together the 2 tablespoons of sugar and 1 teaspoon of cinnamon for the topping.
  8. Once the muffins are done, remove them from the oven and let them cool for a few minutes. Brush the tops with melted butter and sprinkle the cinnamon-sugar mixture on top.
  9. Allow the muffins to cool slightly before serving. Enjoy!

Notes

For extra flavor, consider adding chocolate chips or nuts to the batter before baking.
