- Preheat your oven to 350°F (175°C). Line a mini muffin tin with paper liners or grease with cooking spray.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon until well combined.
- In a separate bowl, beat the egg, then add the milk, vegetable oil, and vanilla extract. Mix until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
- Fill each muffin cup about 2/3 full with the batter.
- Bake for 12-15 minutes or until a toothpick inserted into the center of a muffin comes out clean.
- While the muffins are baking, mix together the 2 tablespoons of sugar and 1 teaspoon of cinnamon for the topping.
- Once the muffins are done, remove them from the oven and let them cool for a few minutes. Brush the tops with melted butter and sprinkle the cinnamon-sugar mixture on top.
- Allow the muffins to cool slightly before serving. Enjoy!
Notes
For extra flavor, consider adding chocolate chips or nuts to the batter before baking.
