  • 1.5 cups All-purpose flour
  • 0.5 teaspoon Salt
  • 0.5 cup (1 stick) Cold unsalted butter cut into cubes
  • 0.25 cup Ice water
Filling Ingredients
  • 4 medium Granny Smith apples peeled, cored, and thinly sliced
  • 0.5 cup Granulated sugar
  • 0.25 cup Packed light brown sugar
  • 2 tablespoons All-purpose flour
  • 1 teaspoon Ground cinnamon
  • 0.25 teaspoon Ground nutmeg
  • 0.25 teaspoon Ground allspice
  • 2 tablespoons Lemon juice
  • 1 tablespoon Butter cut into small pieces

Method
 

Instructions
  1. Make the crust: Whisk together flour and salt. Cut in cold butter using a pastry blender or your fingers until mixture resembles coarse crumbs. Gradually add ice water, mixing until dough comes together. Do not overmix. Form into a disc, wrap, and refrigerate for at least 30 minutes.
  2. Make the filling: Combine sliced apples, granulated sugar, brown sugar, flour, cinnamon, nutmeg, allspice, and lemon juice. Toss gently to coat.
  3. Preheat oven to 375°F (190°C).
  4. Roll out dough to ⅛ inch thickness. Use a 4-inch cookie cutter or knife to cut out circles. Press each circle into a mini muffin tin.
  5. Fill the pies: Spoon apple filling evenly into prepared crusts. Dot each pie with a small piece of butter.
  6. Bake for 20-25 minutes, or until crust is golden brown and filling is bubbly.
  7. Cool: Let cool in muffin tin for a few minutes before transferring to a wire rack to cool completely. Serve warm or at room temperature.

Notes

For a richer flavor, use a combination of apples like Granny Smith and Honeycrisp. You can also add a sprinkle of coarse sugar before baking for extra sweetness and crunch.
