  • 1 pound Large shrimp, peeled and deveined
  • 2 tablespoons Olive oil
  • 2 cups Cherry tomatoes, halved
  • 3 cloves Garlic, minced
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried thyme
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Method
 

Instructions
  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the minced garlic to the skillet and sauté for about 1 minute until fragrant but not browned.
  3. Add the cherry tomatoes to the skillet and cook for about 5 minutes, until they start to soften and release their juices.
  4. Sprinkle the dried oregano and thyme over the tomatoes, stirring to combine.
  5. Add the shrimp to the skillet, season with salt and pepper, and cook for about 3-4 minutes, or until the shrimp turn pink and opaque, stirring occasionally.
  6. Remove from heat and garnish with fresh chopped parsley.
  7. Serve immediately with lemon wedges on the side for squeezing over the shrimp.

Notes

You can substitute the shrimp with chicken for a different protein option. This dish pairs well with rice or crusty bread.
