- In a large bowl, combine the shrimp, olive oil, minced garlic, dried oregano, smoked paprika, lemon juice, and lemon zest. Season with salt and pepper to taste. Toss well to ensure the shrimp are evenly coated.
- Cover the bowl and marinate in the refrigerator for at least 15 minutes, allowing the flavors to meld.
- Heat a large skillet over medium-high heat. Once hot, add the marinated shrimp to the skillet in a single layer.
- Cook the shrimp for about 2-3 minutes on each side, or until they turn pink and opaque. Be careful not to overcook.
- Remove the skillet from heat. Transfer the cooked shrimp to a serving platter and garnish with fresh chopped parsley.
