  • 1 pound Large shrimp, peeled and deveined
  • 3 tablespoons Olive oil
  • 1 teaspoon Dried oregano
  • 2 cloves Garlic, minced
  • 1 cup Cherry tomatoes, halved
  • to taste Salt
  • to taste Pepper
  • for garnish Fresh parsley, chopped
  • for serving Lemon wedges

Method
 

Instructions
  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the minced garlic and sauté for about 1 minute, until fragrant but not browned.
  3. Increase the heat to medium-high and add the shrimp to the skillet.
  4. Season the shrimp with salt, pepper, and dried oregano.
  5. Cook the shrimp for about 2-3 minutes on one side until they turn pink.
  6. Flip the shrimp and add the halved cherry tomatoes.
  7. Continue cooking for another 2-3 minutes, until the shrimp are fully cooked and the tomatoes are softened.
  8. Remove from heat and garnish with fresh parsley.
  9. Serve with lemon wedges on the side for an extra zing.

Feel free to add more vegetables like bell peppers or zucchini for extra nutrition.
