- In a large skillet, heat the olive oil over medium heat.
- Add the minced garlic and sauté for about 1 minute, until fragrant but not browned.
- Increase the heat to medium-high and add the shrimp to the skillet.
- Season the shrimp with salt, pepper, and dried oregano.
- Cook the shrimp for about 2-3 minutes on one side until they turn pink.
- Flip the shrimp and add the halved cherry tomatoes.
- Continue cooking for another 2-3 minutes, until the shrimp are fully cooked and the tomatoes are softened.
- Remove from heat and garnish with fresh parsley.
- Serve with lemon wedges on the side for an extra zing.
