  • 1 lb Large shrimp, peeled and deveined
  • 2 tablespoons Olive oil
  • 4 cloves Garlic, minced
  • 14.5 oz Crushed tomatoes 1 can
  • 1 teaspoon Dried oregano
  • 1 teaspoon Paprika
  • to taste Salt
  • to taste Pepper
  • 1 cup Kalamata olives, pitted and halved
  • 1 cup Feta cheese, crumbled
  • for garnish Fresh parsley, chopped
  • for serving Lemon wedges

Method
 

Instructions
  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the minced garlic to the skillet and sauté for about 1 minute, until fragrant.
  3. Add the crushed tomatoes, dried oregano, paprika, salt, and pepper to the skillet. Stir well to combine.
  4. Bring the mixture to a simmer, then reduce the heat and let it cook for about 5 minutes.
  5. Add the shrimp to the skillet, stirring gently to coat them in the sauce. Cook for about 3-5 minutes, or until the shrimp turn pink and opaque.
  6. Stir in the Kalamata olives and crumbled feta cheese. Cook for an additional 2 minutes, allowing the flavors to meld.
  7. Remove from heat and garnish with fresh parsley.
  8. Serve warm with lemon wedges on the side for an extra burst of flavor.

Notes

For variations, you can add spinach or artichokes for extra flavor and nutrition. Serve over rice or pasta for a heartier meal.
