  • 1 pound Large shrimp, peeled and deveined
  • 2 tablespoons Olive oil
  • 4 cloves Garlic, minced
  • 1 cup Cherry tomatoes, halved
  • 1/2 cup Black olives, pitted and sliced
  • 1/4 cup Fresh basil, chopped
  • to taste Salt
  • to taste Black pepper
  • 1 lemon Juice of 1 lemon
  • to taste Red pepper flakes (optional) For added heat

Method
 

Instructions
  1. Prepare the Ingredients: Start by peeling and deveining the shrimp if not already done. Halve the cherry tomatoes and slice the black olives. Mince the garlic and chop the fresh basil.
  2. Heat the Olive Oil: In a large skillet, heat the olive oil over medium heat.
  3. Sauté the Garlic: Add the minced garlic to the skillet and sauté for about 1 minute, or until it becomes fragrant but not browned.
  4. Cook the Shrimp: Add the shrimp to the skillet. Cook for about 2-3 minutes on each side, or until they turn pink and opaque.
  5. Add Tomatoes and Olives: Stir in the halved cherry tomatoes and sliced black olives. Cook for an additional 3-4 minutes until the tomatoes soften.
  6. Season the Dish: Season with salt and pepper to taste. If desired, add red pepper flakes for a bit of heat.
  7. Finish with Basil and Lemon: Remove the skillet from heat and stir in the chopped basil and lemon juice. Mix well to combine all the flavors.
  8. Serve: Serve the Mediterranean shrimp sauté warm, either on its own or over a bed of rice, quinoa, or pasta for a complete meal.

Notes

For a creamier texture, consider adding a splash of cream or serving with crusty bread.
