  • 1 pound Large Shrimp, peeled and deveined
  • 3 tablespoons Olive Oil
  • 4 cloves Garlic, minced
  • 1 pound Cherry Tomatoes, halved
  • 1 teaspoon Red Pepper Flakes (optional)
  • to taste Salt and Pepper
  • 1/4 cup Fresh Basil Leaves, chopped
  • 1 whole Lemon Juice
  • for serving Lemon Wedges

Method
 

Instructions
  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the minced garlic and sauté for about 1 minute, until fragrant but not browned.
  3. Increase the heat to medium-high and add the shrimp to the skillet. Season with salt, pepper, and red pepper flakes (if using).
  4. Cook the shrimp for about 2-3 minutes on each side, or until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
  5. In the same skillet, add the halved cherry tomatoes. Sauté for about 5 minutes, stirring occasionally, until the tomatoes start to soften and release their juices.
  6. Return the shrimp to the skillet and toss to combine with the tomatoes.
  7. Stir in the chopped basil and lemon juice, cooking for an additional 1-2 minutes to heat through.
  8. Taste and adjust seasoning if necessary.
  9. Serve warm with lemon wedges on the side.

Feel free to add other Mediterranean vegetables like bell peppers or zucchini for extra flavor and nutrition.
