- Preheat the oven to 400°F (200°C).
- Season the cod fillets with salt and pepper on both sides.
- In a large oven-safe skillet, heat olive oil over medium heat.
- Once the oil is hot, add the cod fillets to the skillet and sear for about 3 minutes on each side, until golden brown.
- Remove the cod from the skillet and set aside on a plate.
- In the same skillet, add the cherry tomatoes, Kalamata olives, capers, and minced garlic. Sauté for about 2-3 minutes, until the tomatoes start to soften.
- Stir in the lemon zest and juice, followed by the fresh parsley and red pepper flakes (if using).
- Return the cod fillets to the skillet, spooning some of the sauce over the top.
- Transfer the skillet to the preheated oven and bake for an additional 10-12 minutes, or until the cod flakes easily with a fork.
- Remove from the oven and let cool slightly before serving.
- Serve the cod with the olive, caper, and lemon sauce drizzled on top, and garnish with additional parsley if desired.
Notes
This dish pairs well with a side of rice or crusty bread to soak up the delicious sauce.
