  • 4 pieces Cod fillets 6 ounces each
  • to taste Salt
  • to taste Black pepper
  • 2 tablespoons Olive oil
  • 1 cup Cherry tomatoes halved
  • 1/2 cup Kalamata olives pitted and sliced
  • 2 tablespoons Capers rinsed and drained
  • 3 cloves Garlic minced
  • 1 whole Lemon zest and juice
  • 1/4 cup Fresh parsley chopped
  • 1/2 teaspoon Red pepper flakes optional

Method
 

Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Season the cod fillets with salt and pepper on both sides.
  3. In a large oven-safe skillet, heat olive oil over medium heat.
  4. Once the oil is hot, add the cod fillets to the skillet and sear for about 3 minutes on each side, until golden brown.
  5. Remove the cod from the skillet and set aside on a plate.
  6. In the same skillet, add the cherry tomatoes, Kalamata olives, capers, and minced garlic. Sauté for about 2-3 minutes, until the tomatoes start to soften.
  7. Stir in the lemon zest and juice, followed by the fresh parsley and red pepper flakes (if using).
  8. Return the cod fillets to the skillet, spooning some of the sauce over the top.
  9. Transfer the skillet to the preheated oven and bake for an additional 10-12 minutes, or until the cod flakes easily with a fork.
  10. Remove from the oven and let cool slightly before serving.
  11. Serve the cod with the olive, caper, and lemon sauce drizzled on top, and garnish with additional parsley if desired.

Notes

This dish pairs well with a side of rice or crusty bread to soak up the delicious sauce.
