- In a large mixing bowl, combine the shrimp, minced garlic, cracked black pepper, lemon zest, lemon juice, and a pinch of salt. Add 2 tablespoons of olive oil and toss everything together until the shrimp are well coated. Let marinate for about 15-20 minutes.
- In a large skillet, heat the remaining 1 tablespoon of olive oil over medium-high heat until shimmering.
- Add the marinated shrimp to the skillet in a single layer. Cook for 2-3 minutes on one side, until they turn pink and opaque. Flip the shrimp and cook for an additional 2 minutes on the other side.
- Once the shrimp are cooked through, sprinkle the chopped thyme over the top and give everything a good toss to combine.
- Remove the skillet from the heat. Serve the shrimp immediately with lemon wedges on the side and garnish with fresh thyme sprigs.
Notes
For extra flavor, consider adding a pinch of red pepper flakes for heat or serve over a bed of rice or pasta.
