  • 1 pound Large shrimp, peeled and deveined
  • 3 tablespoons Olive oil
  • 4 cloves Garlic, minced
  • 1 tablespoon Fresh thyme leaves, chopped
  • 1 teaspoon Cracked black pepper
  • 1 teaspoon Lemon zest
  • 2 tablespoons Fresh lemon juice
  • to taste Salt
  • Lemon wedges for serving
  • Fresh thyme sprigs for garnish

Method
 

Instructions
  1. In a large mixing bowl, combine the shrimp, minced garlic, cracked black pepper, lemon zest, lemon juice, and a pinch of salt. Add 2 tablespoons of olive oil and toss everything together until the shrimp are well coated. Let marinate for about 15-20 minutes.
  2. In a large skillet, heat the remaining 1 tablespoon of olive oil over medium-high heat until shimmering.
  3. Add the marinated shrimp to the skillet in a single layer. Cook for 2-3 minutes on one side, until they turn pink and opaque. Flip the shrimp and cook for an additional 2 minutes on the other side.
  4. Once the shrimp are cooked through, sprinkle the chopped thyme over the top and give everything a good toss to combine.
  5. Remove the skillet from the heat. Serve the shrimp immediately with lemon wedges on the side and garnish with fresh thyme sprigs.

Notes

For extra flavor, consider adding a pinch of red pepper flakes for heat or serve over a bed of rice or pasta.
