- Preheat your oven to 400°F (200°C).
- In a small bowl, mix together the olive oil, minced garlic, cracked black pepper, lemon zest, and lemon juice.
- Place the Alaska pollock fillets on a baking sheet lined with parchment paper.

- Season with salt to taste.
