  • 2 tablespoons Olive oil
  • 3 cloves Garlic, minced
  • 1 teaspoon Cracked black pepper
  • 1 whole Lemon zest
  • 1 whole Lemon juice
  • to taste Salt
  • for garnish Fresh parsley, chopped

Method
 

Instructions
  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, mix together the olive oil, minced garlic, cracked black pepper, lemon zest, and lemon juice.
  3. Place the Alaska pollock fillets on a baking sheet lined with parchment paper.
  4. Brush the lemon-garlic mixture generously over each fillet.
  5. Season with salt to taste.
  6. Bake in the preheated oven for 15-20 minutes, or until the fish flakes easily with a fork and is opaque in the center.
  7. Remove from the oven and let rest for a few minutes.
  8. Garnish with fresh chopped parsley before serving.
