  • 1 lb Large shrimp, peeled and deveined
  • 1 lb Asparagus, trimmed and cut into 2-inch pieces
  • 1/4 cup Olive oil
  • 1 Lemon, juice and zest
  • 3 cloves Garlic, minced
  • 1 tsp Dried oregano
  • 1 tsp Dried thyme
  • Salt and pepper, to taste
  • 1/2 cup Crumbled feta cheese
  • Fresh parsley, chopped (for garnish)

Method
 

Instructions
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, salt, and pepper.
  3. Add the shrimp to the bowl and toss until they are well-coated with the marinade. Let it sit for about 15 minutes to absorb the flavors.
  4. On a large baking sheet, spread the asparagus in a single layer. Drizzle with a bit of olive oil and season with salt and pepper.
  5. Place the marinated shrimp on top of the asparagus in a single layer.
  6. Roast in the preheated oven for 10-12 minutes, or until the shrimp are pink and opaque and the asparagus is tender.
  7. Remove from the oven and sprinkle crumbled feta cheese over the shrimp and asparagus.
  8. Garnish with chopped fresh parsley before serving.

Notes

For extra flavor, you can add a pinch of red pepper flakes for a bit of heat.
