- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine the olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, salt, and pepper.
- Add the shrimp to the bowl and toss until they are well-coated with the marinade. Let it sit for about 15 minutes to absorb the flavors.
- On a large baking sheet, spread the asparagus in a single layer. Drizzle with a bit of olive oil and season with salt and pepper.
- Place the marinated shrimp on top of the asparagus in a single layer.
- Roast in the preheated oven for 10-12 minutes, or until the shrimp are pink and opaque and the asparagus is tender.
- Remove from the oven and sprinkle crumbled feta cheese over the shrimp and asparagus.
- Garnish with chopped fresh parsley before serving.
Notes
For extra flavor, you can add a pinch of red pepper flakes for a bit of heat.
