- Prepare the Cod: Pat the cod fillets dry with paper towels. Season both sides with salt and pepper.
- Cook the Cod: In a large skillet, heat the olive oil over medium-high heat. Add the cod fillets and cook for about 4-5 minutes on each side, or until the fish is golden brown and flakes easily with a fork. Remove the cod from the skillet and set aside.
- Make the Lemon Garlic Butter: In the same skillet, reduce the heat to medium. Add the butter and let it melt. Stir in the minced garlic and cook for 1-2 minutes, until fragrant. Add the lemon juice and zest, stirring to combine.
- Prepare the Creamy Herb Sauce: Lower the heat to medium-low and pour in the heavy cream. Stir in the Parmesan cheese until melted and smooth. Add the chopped parsley, dill, basil, and Italian seasoning. Mix well and let it simmer for 2-3 minutes to thicken slightly.
- Combine: Return the cooked cod fillets to the skillet, spooning the creamy herb sauce over the top. Cook for an additional 2-3 minutes to heat through.
- Serve: Plate the cod fillets, drizzling extra sauce over the top. Garnish with additional fresh herbs, if desired.
Notes
For a lighter version, reduce the amount of butter and cream. Serve with a side of steamed vegetables or a fresh salad.
