- Preheat oven to 350°F (175°C). Grease a 9x13 inch baking dish.
- In a large bowl, combine the drained whole kernel corn, creamed corn, milk, and eggs. Whisk until well combined.
- Stir in the Jiffy corn muffin mix until just combined. Do not overmix.
- Stir in the shredded cheddar cheese (if using).
- Pour the batter into the prepared baking dish.
- Drizzle the melted butter evenly over the top of the casserole.
- Bake for 25-30 minutes, or until golden brown and set. Let cool slightly before serving.
Notes
For a spicier kick, add a pinch of cayenne pepper or a dash of your favorite hot sauce to the batter. You can also substitute other types of cheese, such as Monterey Jack or pepper jack.
