  • 1 15 ounce can Whole Kernel Corn drained
  • 1 15 ounce can Creamed Corn
  • 1 cup Milk
  • 2 Eggs lightly beaten
  • 1 8 ounce package Jiffy Corn Muffin Mix
  • 1/2 cup Cheddar Cheese shredded (optional)
  • 1/4 cup Melted Butter

Method
 

Instructions
  1. Preheat oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  2. In a large bowl, combine the drained whole kernel corn, creamed corn, milk, and eggs. Whisk until well combined.
  3. Stir in the Jiffy corn muffin mix until just combined. Do not overmix.
  4. Stir in the shredded cheddar cheese (if using).
  5. Pour the batter into the prepared baking dish.
  6. Drizzle the melted butter evenly over the top of the casserole.
  7. Bake for 25-30 minutes, or until golden brown and set. Let cool slightly before serving.

Notes

For a spicier kick, add a pinch of cayenne pepper or a dash of your favorite hot sauce to the batter. You can also substitute other types of cheese, such as Monterey Jack or pepper jack.
