  • 1 cup Chopped nuts (almonds or walnuts)
  • 1/2 cup Shredded coconut
  • 1/4 cup Sesame seeds
  • 1/2 cup Tahini
  • 1/4 cup Honey or maple syrup
  • 1/4 cup Coconut oil, melted
  • 1 teaspoon Vanilla extract
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Cinnamon
  • 1/2 cup Dark chocolate chips

Method
 

Instructions
  1. Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper.
  2. In a large mixing bowl, combine the rolled oats, chopped nuts, shredded coconut, and sesame seeds.
  3. In a separate bowl, whisk together the tahini, honey (or maple syrup), melted coconut oil, vanilla extract, salt, and cinnamon until well combined.
  4. Pour the tahini mixture over the dry ingredients and stir until everything is evenly coated.
  5. Spread the granola mixture evenly onto the prepared baking sheet.
  6. Bake in the preheated oven for 20-25 minutes, stirring halfway through, until the granola is golden brown.
  7. Remove the granola from the oven and let it cool completely on the baking sheet. It will continue to harden as it cools.
  8. Once cooled, stir in the dark chocolate chips.
  9. Store the granola in an airtight container at room temperature for up to two weeks.
