- Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper.
- In a large mixing bowl, combine the rolled oats, chopped nuts, shredded coconut, and sesame seeds.
- In a separate bowl, whisk together the tahini, honey (or maple syrup), melted coconut oil, vanilla extract, salt, and cinnamon until well combined.
- Pour the tahini mixture over the dry ingredients and stir until everything is evenly coated.
- Spread the granola mixture evenly onto the prepared baking sheet.
- Bake in the preheated oven for 20-25 minutes, stirring halfway through, until the granola is golden brown.
- Remove the granola from the oven and let it cool completely on the baking sheet. It will continue to harden as it cools.
- Once cooled, stir in the dark chocolate chips.
- Store the granola in an airtight container at room temperature for up to two weeks.
