- Preheat your oven to 400°F (200°C).
- In a small bowl, whisk together the honey and Dijon mustard until well combined. Set aside.
- Pat the cod fillets dry with paper towels and season both sides with salt and pepper.
- In a large oven-safe skillet, heat the olive oil over medium heat. Once hot, add the cod fillets and cook for about 2-3 minutes on each side, until lightly golden.
- Pour the honey mustard mixture over the cod fillets, ensuring they are well-coated.
- Transfer the skillet to the preheated oven and bake for 12-15 minutes, or until the cod is cooked through and flakes easily with a fork.
- While the cod is baking, prepare the fresh herb yogurt sauce. In a bowl, combine the Greek yogurt, lemon juice, chopped parsley, chopped dill, and minced garlic. Mix well and season with salt and pepper to taste.
- Once the cod is done, remove it from the oven and let it rest for a few minutes.
- Serve the cod hot, drizzled with the honey mustard sauce and a generous dollop of the fresh herb yogurt sauce on the side.
