  • 1/4 cup Honey
  • 1/4 cup Dijon mustard
  • 1 tablespoon Olive oil

  • 1/2 cup Greek yogurt
  • 1 tablespoon Lemon juice
  • 1/4 cup Fresh parsley, chopped
  • 1/4 cup Fresh dill, chopped
  • 1 clove Garlic clove, minced

Method
 

Instructions
  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, whisk together the honey and Dijon mustard until well combined. Set aside.
  3. Pat the cod fillets dry with paper towels and season both sides with salt and pepper.
  4. In a large oven-safe skillet, heat the olive oil over medium heat. Once hot, add the cod fillets and cook for about 2-3 minutes on each side, until lightly golden.
  5. Pour the honey mustard mixture over the cod fillets, ensuring they are well-coated.
  6. Transfer the skillet to the preheated oven and bake for 12-15 minutes, or until the cod is cooked through and flakes easily with a fork.
  7. While the cod is baking, prepare the fresh herb yogurt sauce. In a bowl, combine the Greek yogurt, lemon juice, chopped parsley, chopped dill, and minced garlic. Mix well and season with salt and pepper to taste.
  8. Once the cod is done, remove it from the oven and let it rest for a few minutes.
  9. Serve the cod hot, drizzled with the honey mustard sauce and a generous dollop of the fresh herb yogurt sauce on the side.

Notes

Feel free to substitute other herbs in the yogurt sauce based on your preference, such as chives or cilantro.
