- In a small bowl, whisk together the honey, soy sauce, grated ginger, and olive oil until well combined. Set aside.
- Preheat your oven to 400°F (200°C).
- Pat the cod fillets dry with paper towels. Season both sides with salt and pepper.
- Place the cod fillets in a baking dish. Brush the honey-ginger glaze generously over the top of each fillet.
- Bake the cod in the preheated oven for about 12-15 minutes, or until the fish is cooked through and flakes easily with a fork.
- While the cod is baking, in a separate bowl, mix the mayonnaise, Sriracha sauce, lime zest, and lime juice until smooth. Taste and adjust Sriracha according to your desired spice level.
- Once the cod is done, remove it from the oven. Serve the glazed cod on plates, drizzled with any remaining glaze from the baking dish. Add a dollop of Sriracha lime mayo on the side and garnish with fresh cilantro and lime wedges.
Notes
For a variation, add chopped peanuts as a garnish for extra crunch.
