  • 4 pieces Cod fillets 6 ounces each
  • 1/4 cup Honey
  • 2 tablespoons Soy sauce
  • 1 tablespoon Fresh ginger, grated
  • 1 tablespoon Olive oil
  • to taste Salt
  • to taste Pepper
  • 1/2 cup Mayonnaise
  • 1 tablespoon Sriracha sauce Adjust to taste
  • 1 piece Lime, zest and juice
  • for garnish Fresh cilantro
  • for serving Lime wedges

Method
 

Instructions
  1. In a small bowl, whisk together the honey, soy sauce, grated ginger, and olive oil until well combined. Set aside.
  2. Preheat your oven to 400°F (200°C).
  3. Pat the cod fillets dry with paper towels. Season both sides with salt and pepper.
  4. Place the cod fillets in a baking dish. Brush the honey-ginger glaze generously over the top of each fillet.
  5. Bake the cod in the preheated oven for about 12-15 minutes, or until the fish is cooked through and flakes easily with a fork.
  6. While the cod is baking, in a separate bowl, mix the mayonnaise, Sriracha sauce, lime zest, and lime juice until smooth. Taste and adjust Sriracha according to your desired spice level.
  7. Once the cod is done, remove it from the oven. Serve the glazed cod on plates, drizzled with any remaining glaze from the baking dish. Add a dollop of Sriracha lime mayo on the side and garnish with fresh cilantro and lime wedges.

Notes

For a variation, add chopped peanuts as a garnish for extra crunch.
