- Chill the coconut milk: Refrigerate a can of full-fat coconut milk overnight.
- Scoop out the coconut cream: Open the chilled can and scoop out the thick, solidified coconut cream from the top, leaving the watery liquid behind.
- Combine ingredients: Add the coconut cream, pumpkin puree, maple syrup, pumpkin pie spice, vanilla extract, cinnamon (if using), and salt to a blender.
- Blend until smooth: Blend on high speed until completely smooth and creamy. Scrape down the sides as needed.
- Taste and adjust: Taste the creamer and adjust sweetness or spices as needed. Add more maple syrup or pumpkin pie spice.
- Store and enjoy: Pour into an airtight container and refrigerate for up to one week. Add to coffee, tea, or other beverages.
Notes
For a richer flavor, use full-fat coconut milk. You can also experiment with other spices like nutmeg or ginger. The leftover coconut water can be used in smoothies or other recipes.
