- Preheat the oven to 400°F (200°C).
- In a large mixing bowl, combine the olive oil, minced garlic, thyme, rosemary, smoked paprika, sea salt, black pepper, lemon zest, and lemon juice. Mix well to create a marinade.
- Add the shrimp to the bowl and toss to coat them thoroughly in the marinade. Allow the shrimp to marinate for 15-30 minutes for maximum flavor.
- Line a baking sheet with parchment paper or aluminum foil for easy cleanup.
- Spread the marinated shrimp in a single layer on the prepared baking sheet.
- Roast the shrimp in the preheated oven for 8-10 minutes, or until they are pink and opaque.
- Remove from the oven and let cool for a minute. Garnish with freshly chopped parsley before serving.
- Serve warm as an appetizer or main dish, alongside crusty bread or over a bed of rice or salad.
