  • 1 pound Large shrimp, peeled and deveined
  • 1/4 cup Olive oil
  • 4 cloves Garlic, minced
  • 2 teaspoons Fresh thyme leaves, chopped
  • 2 teaspoons Fresh rosemary, chopped
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Sea salt
  • 1/2 teaspoon Black pepper
  • 1 Lemon, zested and juiced
  • to taste Fresh parsley, chopped (for garnish)

Method
 

Instructions
  1. Preheat the oven to 400°F (200°C).
  2. In a large mixing bowl, combine the olive oil, minced garlic, thyme, rosemary, smoked paprika, sea salt, black pepper, lemon zest, and lemon juice. Mix well to create a marinade.
  3. Add the shrimp to the bowl and toss to coat them thoroughly in the marinade. Allow the shrimp to marinate for 15-30 minutes for maximum flavor.
  4. Line a baking sheet with parchment paper or aluminum foil for easy cleanup.
  5. Spread the marinated shrimp in a single layer on the prepared baking sheet.
  6. Roast the shrimp in the preheated oven for 8-10 minutes, or until they are pink and opaque.
  7. Remove from the oven and let cool for a minute. Garnish with freshly chopped parsley before serving.
  8. Serve warm as an appetizer or main dish, alongside crusty bread or over a bed of rice or salad.

Notes

For a spicy kick, consider adding red pepper flakes to the marinade.
