- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the olive oil, lemon juice, rosemary, thyme, minced garlic, salt, and pepper. Mix well to create a marinade.
- Add the shrimp to the bowl and toss to coat them evenly with the marinade. Let the shrimp marinate for about 15-20 minutes to absorb the flavors.
- Spread the marinated shrimp in a single layer on a baking sheet lined with parchment paper.
- Roast the shrimp in the preheated oven for 8-10 minutes, or until they are pink and opaque.
- Remove from the oven and serve immediately with lemon wedges on the side.
Notes
For extra flavor, you can add a pinch of red pepper flakes to the marinade or serve with a garlic aioli.
