  • 1 pound Large shrimp, peeled and deveined
  • 3 tablespoons Olive oil
  • 4 cloves Garlic, crushed
  • 1 tablespoon Fresh rosemary, chopped
  • 1 tablespoon Fresh thyme, chopped
  • 1 teaspoon Lemon zest
  • to taste Salt
  • to taste Black pepper
  • as needed Lemon wedges, for serving

Method
 

Instructions
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the olive oil, crushed garlic, chopped rosemary, chopped thyme, lemon zest, salt, and black pepper. Mix well to create a marinade.
  3. Add the peeled and deveined shrimp to the bowl and toss until the shrimp are well coated in the herb and garlic mixture.
  4. Spread the marinated shrimp in a single layer on a baking sheet lined with parchment paper.
  5. Roast the shrimp in the preheated oven for 8-10 minutes, or until they are pink and opaque.
  6. Remove the shrimp from the oven and let them cool for a couple of minutes.
  7. Serve the herb roasted shrimp warm with lemon wedges on the side for squeezing.

Notes

For extra flavor, consider adding a pinch of red pepper flakes to the marinade.
