- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine the olive oil, crushed garlic, chopped rosemary, chopped thyme, lemon zest, salt, and black pepper. Mix well to create a marinade.
- Add the peeled and deveined shrimp to the bowl and toss until the shrimp are well coated in the herb and garlic mixture.
- Spread the marinated shrimp in a single layer on a baking sheet lined with parchment paper.
- Roast the shrimp in the preheated oven for 8-10 minutes, or until they are pink and opaque.
- Remove the shrimp from the oven and let them cool for a couple of minutes.
- Serve the herb roasted shrimp warm with lemon wedges on the side for squeezing.
Notes
For extra flavor, consider adding a pinch of red pepper flakes to the marinade.
