- Preheat your oven to 400°F (200°C).
- In a small saucepan, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, making sure not to let it brown.
- Remove the saucepan from heat and stir in the smoked paprika, oregano, thyme, and basil. Mix well to combine, creating a garlic-infused oil with herbs.
- In a large mixing bowl, add the peeled and deveined shrimp. Pour the garlic-infused oil mixture over the shrimp, tossing well to coat evenly. Season with salt and pepper to taste.
- Arrange the shrimp in a single layer on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 8-10 minutes, or until the shrimp are pink and cooked through.
- Remove from the oven and garnish with chopped fresh parsley. Serve immediately with lemon wedges on the side.
Notes
For a spicier version, add a pinch of cayenne pepper to the garlic-infused oil mixture.
