  • 2 pieces T-Bone steaks About 1.5 inches thick
  • to taste Salt
  • to taste Black pepper
  • 1 cup Golden pearl onions Peeled
  • 2 tablespoons Olive oil
  • 1 tablespoon Fresh oregano Chopped
  • 1 tablespoon Fresh thyme Chopped
  • 4 cloves Garlic Peeled
  • 1 Lemon Zested and juiced
  • 1/2 cup Unsalted butter Softened
  • 1/4 cup Fresh parsley Chopped

Method
 

Instructions
  1. In a small bowl, combine the softened butter, lemon zest, lemon juice, chopped parsley, and a pinch of salt. Mix well until all ingredients are thoroughly combined. Transfer the butter mixture onto a piece of parchment paper and roll it into a log. Twist the ends to seal and refrigerate until firm.
  2. Preheat your oven to 400°F (200°C).
  3. Generously season both sides of the T-Bone steaks with salt and black pepper.
  4. In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the steaks and sear for about 4-5 minutes on each side until a golden crust forms.
  5. Add the golden pearl onions, chopped oregano, and thyme to the skillet. Toss to combine and allow the onions to cook for about 2-3 minutes.
  6. Transfer the skillet to the preheated oven and roast for an additional 10-15 minutes, or until the steaks reach your desired level of doneness (130°F for medium-rare).
  7. Remove the skillet from the oven and transfer the steaks to a cutting board. Let them rest for 5-10 minutes to allow the juices to redistribute.
  8. Slice the butter log into rounds and place a slice on each steak. Serve the steaks alongside the roasted golden pearl onions and any pan juices.

Notes

For added flavor, consider marinating the steaks for a few hours before cooking.
